Before music can be added back from iPod to computer, you must make the music folder in your iPod visible. This can be tricky because normally the music folder is hidden and cannot be accessed easily.
You will need a software called TinkerTool in order to find the hidden files if you are using Mac. The software can be downloaded from the internet and when you have done that already, plug in your iPod to your computer and then launch iTunes. If iTunes asks you if you would like to replace your iPod's contents with songs from the iTunes library, just say no. Instead, look for the iPod icon from the source list and click on the Manually Manage Songs and Playlists and Disk Use options. Launch TinkerTool and click on the Finder Tab to see hidden files. The Relaunch Finder should be clicked then, while the iPod's icon on your desktop should be double clicked. Inside this folder are several other folders, and one of these is the music folder. Now, drag this to your desktop and copy the files from your iPod.
On the other hand, if you are using Windows, just plug your iPod and launch iTunes. Pick the iPod icon that you see listed on the iTunes source list. Then, check the Manually Manage Songs Playlist option and the Disk Use option. Look for the iPod icon in My Computer. Proceed to Tools Menu, Folder Options and then View Tap. You will find the Hidden Files and Folders option there. The Show Hidden Files and Folders option should b enabled. Next click your iPod folder and the iPod control folder.
